A few years ago, breakfast was probably the meal I put the least thought into. I'd either grab the quickest thing I could find, or rotate between the same unbalanced meals until I got bored of them.
Now, I see breakfast completely differently. It's one of the easiest opportunities to get protein, fibre, and a variety of plant foods into my day, all before lunchtime. My mornings can be busy, so I've learnt that having a few breakfasts I genuinely enjoy makes staying consistent so much easier.
Here are three breakfasts I make on a regular basis:
Savoury Protein Breakfast Bowl
Ingredients
- 2tbsp Cottage cheese
- 2 scrambled eggs
- Handful of spinach
- 4 cherry tomatoes
- 1/4 of an avocado
- 1tbsp sauerkraut
- 1tsp pumpkin seeds
- 2tsp crumbled feta
Method
- Scramble the eggs until soft and fluffy in a little butter or olive oil, salt & pepper.
- Slice your tomatoes and avocado.
- Add all ingredients to your bowl and enjoy!
Stewed Apple yogurt bowl
Ingredients
- 100g Greek yoghurt
- 50g kefir
- 1 sachet GutSupp
- 30g granola
- 1tsp ground flaxseed
- 1tsp peanut butter
- 1/2 an apple
- 1/2tsp cinnamon
- Large handful mixed frozen berries
- 1tsp honey
- 1tsp chia seeds
Method
- Slice your apple and add to a pan with a dash of butter or oil and some cinnamon over a medium heat. Cook for at least 10 mins or until the apple are soft.
- Over a medium heat, mix the frozen berries, honey and chia seeds. Cook for 10 mins until a jam-like consistency has formed.
- Mix the Greek yoghurt, kefir and GutSupp together until smooth.
- Top with the granola, peanut butter and flaxseed.
- Add the stewed apples and spoon over the chia seed jam.
Mixed Berry Smoothie
